Ingredients:
(Abbreviations: C = cup, tsp. = teaspoon, T= tablespoon, lb = pound, oz.= ounces, pkg = package, pt. = pint, qt. = quart)

1lb Alpine Fresh Asparagus, trimmed, cut in quarters

1lb of Penne Pasta
-
1-2 6oz Salmon filets (depending much fish you want in your dish)

1/2 c Extra Vigin Olive Oil
-
1 1/4 c water
-
1 tsp crushed red pepper
-
3 tsp crushed basil
-
2 tsp salt
-
2 tbs minced garlic
-
1/4 c diced fresh red pepper (1/2 pepper)

Pepper to taste
-
1/2 cup of shredded fresh parmesan romano
Directions:

Preheat oven to 400˚
-
Cook 1lb of penne pasta al dente according to the package and drain.

Season salmon filet(s) with 1/4 cup of olive oil, crushed red pepper, 1 tsp crushed basil, 1 tsp minced garlic.

Cook salmon in a small to medium size sauté pan over medium heat for 5-7 minutes or until flakey.

In another pan (one large enough to hold all ingredients), combine water, 2 tbs olive oil, 1 tsp minced garlic. Bring combination to a simmer and add asparagus. Saute for approx. 5 minutes.

Over low heat, add salmon filets to the pan of asparagus and break the filets down using a fork or spatula, creating small pieces of salmon.

Add pasta to the asparagus and salmon pan toss them together and add all remaining ingredients to the pan, except the cheese. Toss over low heat for 2 minutes and the pour ingredients into a casserole dish.

Spinkle cheese and add pepper to taste.

Place in the oven to finish off for 5-10minute.
