Blueberry Muffins

Ingredients: 

 

(Abbreviations: C = cup, tsp. = teaspoon, T= tablespoon, lb = pound, oz.= ounces, pkg = package, pt. = pint, qt. = quart)

 

  • 1 ½ cups all-purpose flour

  • 3/4 cup white sugar

  • ½ teaspoon salt

  • 2 teaspoons baking powder

  • 1/3 cup vegetable oil

  • 1 egg

  • 1/3 cup milk

  • 1 cup Alpine Fresh blueberries

Directions:

 

  1. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder into a large mixing bowl.

  2. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.

  3. Mix this with flour mixture.

  4. Fold in blueberries.

  5. Fill muffin cups right to the top, and sprinkle raw sugar on the tops.

  6. Bake for 20 to 25 minutes in the preheated oven, or until golden brown.

 

Use sugar crystals to acheieve a crunchy and sweet muffin top. We suggest using Sugar in the Raw.
